Here's a recipe for making bun cha Ha Noi at home:
Ingredients:
- 1 pound ground pork
- 1/2 pound pork belly, sliced
- 2 cloves garlic, minced
- 1 shallot, minced
- 1 tablespoon fish sauce
- 1 tablespoon sugar
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 1/4 cup water
- Rice noodles
- Lettuce and herbs (mint, cilantro, Thai basil)
- Dipping sauce: fish sauce, sugar, vinegar, lime juice, garlic, and chili
Instructions:
- In a bowl, mix together the ground pork, garlic, shallot, fish sauce, sugar, black pepper, and salt until well combined. Shape the mixture into small patties.
- Preheat a grill or grill pan to medium-high heat. Grill the pork patties and pork belly slices until they are browned and cooked through.
- In a small saucepan, heat the water until it comes to a boil. Remove from heat and add the rice noodles. Let them soak for a few minutes until they are tender. Drain and rinse in cold water.
- To make the dipping sauce, mix together fish sauce, sugar, vinegar, lime juice, garlic, and chili until the sugar is dissolved.
- To serve, place a handful of lettuce and herbs on a plate. Add a portion of noodles on top of the lettuce and herbs. Add the grilled pork patties and pork belly on top of the noodles. Serve the dipping sauce on the side.
- To eat, take a small amount of noodles, herbs, and pork and dip it into the sauce before taking a bite.
