How To Make Vietnamese Honeycomb Cake (Banh Bo Nuong)

Vietnamese honeycomb cake, also known as banh bo nuong, is a delicious and spongy dessert that is popular in Vietnam. Here's a recipe for making it at home:

Ingredients:

  • 1 1/2 cups tapioca starch
  • 1/2 cup rice flour
  • 2 teaspoons baking powder
  • 1 1/4 cups coconut milk
  • 1 1/4 cups sugar
  • 4 eggs
  • 1/4 cup vegetable oil
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • A few drops of pandan extract (optional)

Instructions:

  • Preheat your oven to 350°F (180°C).
  • In a large mixing bowl, whisk together the tapioca starch, rice flour, and baking powder.
  • In a separate bowl, whisk together the coconut milk, sugar, eggs, vegetable oil, salt, vanilla extract, and pandan extract (if using) until well combined.
  • Pour the wet ingredients into the dry ingredients and whisk until you have a smooth batter.
  • Pour the batter into a greased 9-inch (23 cm) round cake pan.
  • Bake the cake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
