How to cook fried chicken curry

 Here's a recipe for cooking fried chicken curry:





Ingredients:

  • 4 chicken breasts, cut into small pieces
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp curry powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup flour
  • 1/2 cup breadcrumbs
  • 2 eggs, beaten
  • Vegetable oil, for frying
  • 1 cup chicken broth
  • 1 cup coconut milk
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 carrot, sliced
  • 1 tbsp cornstarch
  • 2 tbsp water
  • Fresh cilantro, chopped

Instructions:

  1. In a large bowl, mix together the chicken pieces, curry powder, salt, and black pepper. Set aside.
  2. In a separate bowl, mix together the flour and breadcrumbs.
  3. Dip each piece of chicken into the beaten eggs, then coat with the flour mixture.
  4. Heat the vegetable oil in a large skillet over medium-high heat. Fry the chicken pieces in the hot oil until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels and set aside.
  5. In the same skillet, add the diced onion and minced garlic. Cook until softened, about 2-3 minutes.
  6. Add the chicken broth, coconut milk, and diced bell peppers and carrot to the skillet. Bring to a simmer and cook for 5-7 minutes, until the vegetables are tender.
  7. In a small bowl, mix together the cornstarch and water. Add to the skillet and stir until the sauce thickens, about 1-2 minutes.
  8. Add the fried chicken pieces to the skillet and stir to coat with the curry sauce. Cook for an additional 2-3 minutes to heat through.
  9. Garnish with fresh cilantro and serve over rice.
