Ingredients:
- 4 chicken breasts, cut into small pieces
- 1 onion, diced
- 3 garlic cloves, minced
- 2 tbsp curry powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup flour
- 1/2 cup breadcrumbs
- 2 eggs, beaten
- Vegetable oil, for frying
- 1 cup chicken broth
- 1 cup coconut milk
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 carrot, sliced
- 1 tbsp cornstarch
- 2 tbsp water
- Fresh cilantro, chopped
Instructions:
- In a large bowl, mix together the chicken pieces, curry powder, salt, and black pepper. Set aside.
- In a separate bowl, mix together the flour and breadcrumbs.
- Dip each piece of chicken into the beaten eggs, then coat with the flour mixture.
- Heat the vegetable oil in a large skillet over medium-high heat. Fry the chicken pieces in the hot oil until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels and set aside.
- In the same skillet, add the diced onion and minced garlic. Cook until softened, about 2-3 minutes.
- Add the chicken broth, coconut milk, and diced bell peppers and carrot to the skillet. Bring to a simmer and cook for 5-7 minutes, until the vegetables are tender.
- In a small bowl, mix together the cornstarch and water. Add to the skillet and stir until the sauce thickens, about 1-2 minutes.
