Ingredients:

  • 1 cup of rice flour
  • 1 tablespoon of tapioca starch
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of sugar
  • 2 cups of water
  • Cooking oil
  • Scallions, pork rinds, fried shallots, dried shrimp, and fish sauce for the toppings.

Here are the steps to make banh beo:

  • In a mixing bowl, combine the rice flour, tapioca starch, salt, and sugar.
  • Gradually add water while stirring until the batter is smooth and has a thin consistency.
  • Heat a non-stick pan over medium heat and lightly brush it with cooking oil.
  • Ladle a small amount of batter into the pan, enough to cover the bottom. Tilt the pan to spread the batter evenly.
  • Cover the pan with a lid and let it steam for about 2-3 minutes, or until the surface of the rice cake is set.
  • Use a spatula to carefully remove the rice cake from the pan and onto a plate.
  • Repeat steps 3-6 until all the batter is used up.
  • To make the toppings, finely chop scallions and fry pork rinds until crispy. Soak dried shrimp in warm water for a few minutes and then chop them.
